๐ Date & Coconut Energy Bars: The Perfect Fuel for Long Walks and Hikes
When youโre heading out on a long walk, a weekend ramble, or a fullโon hike, having a reliable snack in your bag can make all the difference. These Date & Coconut Energy Bars are one of our favourite goโtos โ theyโre sweet, chewy, nourishing, and incredibly easy to make. Even better, they require no baking and only three simple ingredients.
Whether youโre prepping for an adventure or just want a wholesome snack ready in the fridge, this recipe fits beautifully into busy days.
๐ฅฅ Ingredients
250g soft, stoned dates
50g coconut oil
100g vegan digestive biscuits
๐ฃ Method
Pop all the ingredients into a food processor and blend until the mixture becomes smooth, sticky, and well combined.
Press the mixture firmly into a lined 1lb loaf tin, making sure to smooth the top.
Freeze for at least 1 hour โ overnight works brilliantly if you prefer a firmer texture.
Once set, let the block soften slightly at room temperature, then slice into 8 bars.
Enjoy immediately or wrap them up for your next outing. They travel wonderfully and hold their shape on the go.

Keep your energy bars in the fridge for up to a week. They stay firm, fresh, and ready whenever you need a quick boost โ whether thatโs midโhike, midโcommute, or midโafternoon slump.

Itโs lovely to remember enjoyable walks, when youโre huddled in your home to keep warm from the snow and the ice. This is a walk we did in November, the weather was incredible, just like a summerโs day.
Walking from Looe to Seaton, Cornwall
A peaceful November wander along the South West Coast Path
Thereโs something magical about the Cornish coast in November. The summer crowds have long drifted away, the air feels crisp and clean, and the sea takes on that deep, moody blue that makes every viewpoint feel dramatic. Itโs the perfect time to slow down, breathe in the salt air, and enjoy the South West Coast Path at its quietest.
This walk from Looe to Seaton is a lovely blend of gentle seaside strolling and rugged cliffโtop scenery โ ideal for anyone who wants a rewarding route without committing to a fullโday trek.
Setting off from Looe
We started our day in Looe, parking at the Looe Harbour Car Park. Itโs a convenient spot with easy access to the coast path, and from there the route quickly leads you away from the bustle of town and out towards the open coastline.
The first stretch takes you past Plaidy, a peaceful little cove tucked beneath the cliffs, before continuing on to Millendreath Beach. Even in November, Millendreath has a charm of its own โ quiet, sheltered, and framed by steep green hills.
Climbing towards Bodigga Cliff
From Millendreath, the path begins to rise. Itโs nothing too strenuous, but enough to reward you with increasingly impressive views. As you pass Bay View Farm Campsite, the landscape opens up beautifully. On a clear day, you can see the coastline sweep away into the distance, with the waves rolling in far below.
Bodigga Cliff is one of the highlights of this section. The path hugs the edge of the hillside, giving you that classic South West Coast Path feeling โ wild, exposed, and wonderfully scenic.
A gentle descent into Seaton
After the cliffโtop stretch, the route gradually drops back down towards sea level, leading you into Seaton. The beach here is wide and pebbly, backed by a small village with cafรฉs and facilities โ a perfect place to rest your legs after the walk.
Getting back to Looe
To make the day even easier, we hopped on the bus back to Looe via Liskeard. Itโs a good way of looping back to the start of the walk without having to retrace any steps.

Another year has flown by, and as we look back on everything weโve experienced, we wanted to share some highlights โ along with a few things weโre excited to bring you in the year ahead.
Weโve continued our journey along the South West Coast Path and are delighted to say weโve now completed almost half of it. Every section has offered something different, and weโre looking forward to tackling the next stretches soon.
One of the standout moments of our year was our unforgettable trip to Canada. From the buzz of Toronto and Vancouver to the tranquillity of Vancouver Island and the breath taking scenery of the Rockies, it was an adventure weโll be talking about for a long time.
Back at home, we fell a little behind with our vegan recipe posts โ especially the easy, packable snacks we love to take on our walks โ but weโre catching up now and have plenty of ideas lined up.
Weโve also enjoyed exploring closer to home here in the South West of England, filming a few of our local walks to share with you.

Easy Vegan Christmas Biscuits ๐ โจ
Thereโs something magical about baking in the runโup to Christmasโthe kitchen fills with festive spices, little hands get busy cutting out stars and snowflakes, and before long the whole house smells like the holidays. These easy vegan Christmas biscuits are the perfect recipe for creating those moments.
Theyโre wonderfully simple to make, using everyday ingredients and no complicated steps. The dough comes together quickly, rolls out beautifully, and is sturdy enough for all your favourite festive cutters. Whether youโre baking with children, preparing treats for guests, or making edible gifts, this recipe delivers every time.
Why Youโll Love These Biscuits
Completely vegan, using coconut oil for a buttery texture
Ideal for baking with childrenโfun, handsโon, and forgiving
Perfect for decorating with icing, sprinkles, or melted chocolate
Makeโahead friendly and great for gifting
Ingredients
2 ยผ cups plain flour
ยฝ teaspoon ground ginger
ยฝ teaspoon mixed spice
ยฝ teaspoon cinnamon
Pinch of ground cloves
ยฝ cup caster sugar
110 g coconut oil
ยผ teaspoon salt
Approx. 3 tablespoons water
Method
Preheat the oven to 190ยฐC (fan 170ยฐC / 375ยฐF / Gas 5).
Add the flour, ginger, mixed spice, cinnamon, cloves, sugar, coconut oil, and salt to a food processor or mixing bowl.
Mix until the texture resembles fine crumbs.
Gradually add the water until a soft dough forms.
Roll out the dough on a lightly floured surface.
Cut into festive shapesโstars, trees, snowflakes, or whatever you fancy.
Place the biscuits on a baking tray lined with parchment or a reusable liner.
Bake for around 10 minutes, until lightly golden.
Allow to cool completely.
Enjoy them plain, or decorate with icing, melted chocolate, and sprinkles.
Store in an airtight tin for up to a week.

Once the biscuits have cooled, wrap them in cellophane bags tied with ribbon, or stack them in small jars with handwritten labels. They make charming, thoughtful homemade gifts that feel personal and full of love.

Conquering the Coast: Osmington Mills to Kimmeridge Bay
Hi Folks,
Itโs been about a month since our holiday in Weymouth, and last week I finally uploaded the last of the videos from that trip. What a wonderful adventure it was! We spent our days walking the South West Coast Path, tackling the stretch from Osmington Mills to Kimmeridge Bay.
This section was one we particularly wanted to completeโitโs the last really tough part we felt we should do before we get โtoo old,โ lol. The steep hills around Kimmeridge Bay were especially challenging, made even more interesting by breaking in a pair of brand-new walking boots. But despite the effort, the views were absolutely breathtaking and made every climb worthwhile.
We had a fantastic few days, and the memories of those coastal vistas will stay with us for a long time. Now weโre already looking forward to our next walk along the path, which weโve planned for just after Christmas.

Lulworth Cove to Arish Mell
Hi Folks,
Hope youโve had a good week.
I have just uploaded a video of our walk from Seaton in Cornwall to Portwrinkle, along the South West Coast Path. We did this walk at the beginning of November on quite a blustery day. It was a lovely walk full of interesting information about the Church in Downderry and Portwrinkle itself. We would thoroughly recommend this walk as it is easy to catch the bus back to Seaton once you get to Portwrinkle.
Itโs worth doing this walk for the bus journey itself, very interesting being on a double decker bus going through tiny countryside lanes. At Seaton there is the Beach House which has excellent food choices for vegans, we enjoyed some battered cauliflower in a great sauce, along with some chips and a cup of tea.

Hi Folks,
Hope youโre warm and cozy in this weather.
Funny to look back at this video and see that it was a blisteringly hot day with no mercy and no shade. Iโm sat at the computer at the moment wrapped up with my fluffy dressing gown and fluffy socks on trying to keep out the chill.
Iโm only uploading to YouTube and our website at the moment as although I enjoy creating videos for YouTube, the whole social media thing has become very time intensive; and I want to do other things as well.
So there will be a drop in the number of videos I create and I wonโt be bothering with Facebook or Instagram anymore, unless there is the occasional thing I want to upload.
I am thinking in the future of changing from YouTube to Vimeo so there arenโt any adverts interrupting the flow of my videos, but that will be a project for the future. Huge job to upload all the videos again on to another platform.
Can I also just say that Iโve had enough of being controlled by the algorithm, AI and the โsocial mediaโ pressure to perform and out compete. This website and the YouTube channel are just for fun; just for recording our own walks and recipes etc and if you enjoy coming along for the ride you are more than welcome.

Last of our Canadian Mini Series now up and running.
It feels quite sad to have finished editing the videos, I loved re-living every moment. I think our lives will be defined as pre and post Canada, we waited so long to go and it was over in a flash. We absolutely loved it and if we ever had the chance we would definitely go again.
Now onto other things, there will be a video soon of me trying to veganise a Nanaimo Bar recipe, which is interesting, but it tasted lovely. I will be filming more vegan snacks soon. I have been experimenting and have not been happy with two recipes which need to be re-done.
Also, I have two walks along the South West Coast path which need to be edited and uploaded, so watch this space.

Part 5 up and running - our time travelling from Whistler to Banff via Clearwater, Jasper and an amazing glacier.
I have never seen a glacier before and it was wonderful to see. I thought to myself, this is similar to Cheddar Gorge, goodness knows how long ago. I learnt about it at school, but to actually see a glacier in real life, carving out space as it slowly comes down the mountain, is something else. The cool breeze was also more than welcome on a hot day.

Canadian Holiday - Mini Series - 4 up and running.
We had an amazing time in Whistler, we went up the mountains by gondola, and travelled from peak to peak from Whistler to Blackcombe and back down to the bottom.
We saw bears on a bear tour which was beyond wonderful, Iโve always wanted to see a bear in itโs habitat in real life, truly awesome.
We also ate some very yummy vegan food.
Whistler was lovely, and Vancouver Island was a hard act to follow.
Hope you enjoy travelling virtually with us in Whistler.

On the snack frontโweโve whipped up a new recipe: cranberry and maple syrup energy balls. Perfect for taking along on a hike! Just a heads-up, they are a bit sticky... might be worth bringing a cocktail stick unless you're happy to lick your fingers clean! Youโll find the recipe under our Vegan Snacks and Picnics section. No video yet, but Iโm hoping to film one later this year.
The inspiration actually came from thoughts about our upcoming trip to Canada. If you know of any must-try vegan snacks over there, weโd love your suggestions!

We have just had an amazing holiday in Hartland where we walked from Bucks Mills to Bude along the South West Coast Path; so Jayne is busy editing the videos to get them onto YouTube, the first one is scheduled for this Thursday evening (the 5th June 2025). This is from Bude to The Bush Inn in Morwenstow.
On the first day of our holiday we spent the day at Westward Ho and had some fun on the beach and a paddle in the sea, not to mention a very yummy vegan ice cream, shorts are opposite.

Thereโs something magical about walking an ancient path, knowing it has carried countless footsteps before yours. Our recent adventure took us along a fascinating route mapped out by Anthony Maries from Walking Britainโthe Shepton Mallet and the Fosse Way trail. While the original path was mapped in 2013, time and development have altered the landscape, making the start a bit tricky to locate. However, once we found our way, the journey through history and nature was as captivating as ever.
The Changing Landscape & Historic Charm
As we shared in our video, additional changes are on the horizon due to development near one of the fields. While progress reshapes the area, the enduring spirit of the Fosse Way remains untouched, offering walkers an immersive experience filled with history and scenic beauty.
A Stop at St Aldhelmโs Well & Imagining Roman Marches
One of the highlights of our walk was the tranquil St Aldhelmโs Well, a site steeped in legend and local lore. As we moved along the ancient Roman road, we couldnโt help but picture the Centurions who once marched these same routesโboots on stone, voices echoing in the landscape. This moment of reflection added another layer to an already enriching walk.
A Roman-Inspired Picnic โ Vegan Edition!
To truly embrace the spirit of history, we packed a Roman-inspired picnic featuring: ๐ฅ Flatbreads โ A staple in ancient Roman diets. ๐พ Spelt-based dishes โ Spelt was a widely consumed grain in Roman times. ๐ฏ Globi โ A delightful sweet treat from Roman kitchens, which we made completely vegan!
Connecting with history isnโt just about walking the pathsโitโs about tasting it too. Our picnic was a delicious way to merge the past with the present while enjoying the beauty of the great outdoors.
Wildlife Spotting Along the Way
For those who love birdwatching, we highly recommend downloading the Merlin appโa fantastic tool that helps identify bird calls, making it easier to connect with nature while wandering these historic trails.

We wanted to share an update on our walking adventure! While exploring the beautiful South Devon coastline, we realized we missed a small section at Stoke Fleming. To keep things complete, hereโs the link between our walks.
Our first walk took us from Stoke Fleming to Dartmouth. We started at the Stoke Fleming village hall, hopping off the bus before making our way back to Dartmouth, enjoying the stunning views along the route.
The second part of our journey was from Stoke Fleming to Torcross. Although we missed a small section at Stoke Fleming, this link ties together the whole stretch of coastline, connecting these two incredible walks into one unforgettable experience.

Our Walk from Stoke Fleming to Torcross
Hi Folks,
The walk from Stoke Fleming to Torcross is one we hold close to our heartsโa journey that combines breathtaking scenery, local history, and moments of quiet reflection.
We began in the charming village of Stoke Fleming, greeted by its friendly atmosphere and welcoming smiles. The path took us along rolling countryside and rugged cliffs, where we paused more than once to take in the stunning sea views.
Passing Blackpool Sands, we couldn't help but feel a sense of awe at its natural beauty.
As we made our way closer to Torcross, the scenery changed again. The vast stretch of Slapton Sands came into view, accompanied by the serene waters of Slapton Ley. The birdlife here is astonishingโwe spent time watching the swans gliding effortlessly across the lagoon. The connection to nature in this part of the world is simply unparalleled. It's also incredible to think that this peaceful spot once played a role in preparing for the D-Day landings.
We finished our walk with a visit to the Sherman Tank Memorial, a stark but important reminder of the past.
This walk isnโt just about the miles coveredโitโs about the memories made. For us, itโs a perfect blend of adventure, reflection, and connection with the stunning South Devon coastline. We hope youโll enjoy it as much as we did.

Yesterday, we enjoyed a delightful walk from Stoke Fleming to Torcross. Though our plan was to go the other way around, an absent bus reshuffled our routeโbut it turned out to be a wonderful day nonetheless. I'll be sharing this walk on the blog soon, so stay tuned!

Hi Folks,
I have put a new recipe on a new page. Vegan Recipes - Spring.
It is for a salad, because believe it or not, it was 18C the other day and I started to believe in salads again. Not so sure now, but the recipe is lovely and will come in handy for those warmer days to come.
Could be served with a hot jacket potato when the weather is cold though.
The salad is full of protein with chickpeas and tahini, and very tasty too.
Why not give it a go, we had it with pizza and chips and it was very yummy.
Weโre going on a walk around Mells, Fussells Iron Works and Whatley Quarry in a few days time. I am hoping to pick some wild garlic and share a new recipe with you.

Hi Folks,
Sometimes plans have to change and we have had to postpone our walk from Torcross to Stoke Fleming for a few more weeks, so watch this space.
I have also made another review about the Sage food processor because we had to change the bowl, which had cracked randomly and then it started to leak. So if you are interested in a brilliant food processor which aids a vegan diet (ie: it can grind down nuts) just press on the photo opposite to be taken to the video.
Paul is also planning a walk in Somerset, around the Mells area, for the Ramblers, which should be fun. Paul and I will do this walk together soon so I will film it and share it with you.
It seems the weather is warming up a bit, I saw some lovely crocuses on my walk today.

Hi Folks,
Itโs been ages since I blogged, time flies when youโre enjoying yourself.
About a month ago we walked some more of the South West Coast Path from Stoke Fleming to Dartmouth, which was a wonderful opportunity to blow away the cobwebs. We are going to walk from Torcross to Stoke Fleming over the next couple of weeks, so will keep you updated.
I have also tried a new recipe for some vegan easter biscuits which will be released nearer to Easter. I adapted an old recipe I used to use before I was vegan and, even though I say so myself, it came out really well.
I have also been struggling with my breathing for some time, well, all my life to be honest, but it has got really bad recently. I am undergoing tests for a lung condition but I am determined to try and keep as fit as possible, by eating more healthy and keeping up the walking and keep fit exercises. I might blog about this if anyone is interested.

Hi Folks,
I am a great believer in sustainable clothing, well anything sustainable really. I regularly go along to the local clothes swap and they had a lovely xmas clothes swap going on. I enjoy swapping clothes and having a change of clothes without the expense of actually buying clothes.
Whilst I was there they had two workshops going on, one to make a rag wreath and one to learn the Japanese art of wrapping presents in cloth. My efforts were fairly modest which didnโt reflect how brilliant the ideas were or how good others were. The people teaching these crafts were very patient and fun. It was a lovely way to spend a wet saturday afternoon. I do hope they do something like this again.
The top photo is of my rag wreath which I think will go lovely with my xmas trimmings and the bottom photo is of an empty box wrapped in some gorgeous cloth. I am going to save lovely cloth from now on to wrap my presents with a little message to please return so it can be re-used. What a brilliant idea.

We had a short visit down to Saltash in Cornwall and we walked around Forder Creek. It was absolutely wonderful and we noticed that there are a lot of walks in the area. So we will be doing more next time we are down there. Here is a short of our visit there.

Paul and I recently had a lovely holiday in Devon and we walked from Dawlish to Beer along the South West Coast Path. Jayne is busy editing and uploading the videos to YouTube at the moment; and then she will upload them under โThe Walking Veganโ page. Here is a snippet of one of the walks we did. Hope you enjoy.

My Mum, Barbara, and myself recently visited a Church which has some of our ancestors, going back to 1590. Absolutely fascinating and very emotive. Fascinating because it is hard to believe we are linked to people from so long ago, and emotive because of the personal link to the past which is otherwise pretty anonymous. We enjoyed looking around the Church and finding links to our past. Here is a short preview of the video which will be released on the 8th November.
