Easy Vegan Chickpea Salad Recipe: Protein-Packed and Delicious!

Ingredients:

1 tin of chickpeas

1 tablespoon of olive oil

1 teaspoon of garam masala

1 teaspoon of garlic granules

salt

pepper

tough salad greens like batvia lettuce, romaine lettuce or spinach

tomatoes

cucumber

apple

pomegranate seeds

fresh parsley

Dressing:

250ml of cold water

3 – 5 tablespoons of tahini

juice of half a lemon

1 teaspoon of garlic granules

a squirt of maple syrup

salt

pepper

Method:

1. drain chickpeas and put into roasting tin, pour over olive oil and sprinkle on spices, garlic granules and salt and pepper. Mix well together and put in the oven for about 30 minutes at 180C (fan).

2. put all the chopped up salad ingredients into a bowl and mix thoroughly. When the chickpeas are cold add them to the mixture.

3. for the dressing mix the tahini into the water, add the lemon juice, garlic granules, maple syrup, salt and pepper and whisk all together.

4. to serve, put the salad in a bowl and pour on the dressing.
